Ingredients
- 1 onion
- 2 cloves of garlic
- olive oil
- 2 - 3 tbsp curry paste any color
- 3 kaffir lime leaves, soaked and chopped
- 500g mince
- 1 400g can coconut cream
- 1/4 cup almond nut butter
- up to 1/2 cup water
- salt
- 1 tsp sugar
- 2 cups sliced vegies
- spring onion or basil for garnish
Instructions
- Slice onion and mince garlic
- Heat oil in pan and cook onion and garlic
- Stir in curry paste and kaffir lime leaves
- Add mince and cook until it has lost its pink color
- Reduce heat, add coconut cream, nut butter and stir well, cook for 7 minutes
- Add the rest of the ingredients, stir and cook until the veges are tender
- Garnish
