Rice

Ingredients

  • 1 onion
  • 2 cloves of garlic
  • olive oil
  • 2 - 3 tbsp curry paste any color
  • 3 kaffir lime leaves, soaked and chopped
  • 500g mince
  • 1 400g can coconut cream
  • 1/4 cup almond nut butter
  • up to 1/2 cup water
  • salt
  • 1 tsp sugar
  • 2 cups sliced vegies
  • spring onion or basil for garnish

Instructions

  1. Slice onion and mince garlic
  2. Heat oil in pan and cook onion and garlic
  3. Stir in curry paste and kaffir lime leaves
  4. Add mince and cook until it has lost its pink color
  5. Reduce heat, add coconut cream, nut butter and stir well, cook for 7 minutes
  6. Add the rest of the ingredients, stir and cook until the veges are tender
  7. Garnish
